The
origin of artichokes is unknown, some says they come from Africa,
some says Mediterranean. For me artichokes are very Sicilian. Because
of climate and its role in Sicilian cuisine. In Sicily, and generally
in Italy we have lots of delicious recipes with artichokes, from
pasta to fries. Today I want to share with you my favorite one:
Sicilian Style Stuffed Artichokes.
The difference of this recipe than others is cooking method. Usually stuffed artichokes are cooked in oven. But in my recipe they are cooked in a pan. So bread crumbs make them very crispy on the outside but soft inside.

INGREDIENTS
- 4 artichokes, boiled
- 1 cup bread crumbs
- 1 garlic clove , chopped
- ½ cup Parmesan cheese, grated
- 1 anchovy fillet
- A few sprig of parsley
- A pinch of salt
- 3 tablespoons extra virgin olive oil
DIRECTIONS
- Combine bread crumbs, garlic, cheese, anchovy, salt and olive oil in a bowl.
- Mix well, until the mixture is moistened enough to stick together. If not, add some more olive oil.
- Cut artichokes in half.
- Stuff each artichoke's leaf with the crumbs mixture starting from the lower part.
- Cover cut surface of the artichokes with the mixture.
- Add some oil in a pan, heat and place the artichokes in it the mixture covered side down.
- Fry until lightly browned.
- Flip the artichokes over and cook for about 5 minutes.
